Chocolate Banana Protein Pancakes With PB Whip

For the Pancakes:

For the PB Whip:

  • 1 can well-chilled coconut cream, whipped
  • 1/3 cup creamy peanut butter
  • 1/4-1/2 cup maple syrup
  • sea salt

Topping suggestions: sliced bananas, sliced strawberries, goji berries, chopped dark chocolate, granola, sea salt, etc.

Combine pancake ingredients in a high-speed blender and blend until smooth. Griddle batter as you would traditional pancakes (on a lightly oiled nonstick pan over medium-high heat until bubbles surface; flip; cook another min).

Meanwhile, fold peanut butter, maple syrup + salt (to taste) into whipped coconut cream.

Serve pancakes topped with PB whip, and toppings of choice.
